Phoebe and I got takeout from Buckeye Pho a few days ago, marking the first time I’ve ever had Pho. And I’m glad this is a written communication, because I still don’t know how to properly pronounce Pho. I don’t see that as being a major concern, though, as I didn’t taste what all the fuss was about. Don’t get me wrong, it was fine; just nothing special. There’s a good chance my opinion was influenced by hearing for so long that Pho was so great—my expectations were anchored too high. I thought Vietnamese food was supposed to be more flavorful. Despite adding 2 kinds of sauce packets to the broth, it remained quite bland. And with the high broth-to-actual-sustenance ratio, I could’ve eaten 10 helpings. But I always say, “I’ll try anything twice.” So I’ll have to give Pho at least one more go, next time from a different Vietnamese joint. The U.S—once engaged in armed conflict with Vietnam—has readily incorporated the Asian nation’s cuisine into American culture. That rather forced reminder of war segues me abruptly into wishing you a safe and happy Independence Day.
