What question have you struggled with lately?
Why is pork and sauerkraut a New Year’s Day staple? My wife makes it every January 1st. And it’s really not that great. Individually, each component is fine. Mashed potatoes are a common accoutrement with many dishes, and wonderfully so. Sauerkraut on a hotdog is always a pleasant surprise. Pork—the other white meat—seems to bask in its underrated status. But the 3 ingredients together are just so … damn … boring. The monochromatic ingredients only serve to hinder the taste profile. The color variety stretches from white to whitish-gray. Plop all that down on a white plate and you can’t even see what you’re eating. Adding salt sure doesn’t help the color pallet. A bit of yellow butter adds a splash of color, but melts away too soon. Pepper is the sole color variant. But technically, black is the complete absence of color, so even that is questionable. I struggle to answer why pork and sauerkraut remains a New Year’s Day staple? Perhaps it’s to create the blandest possible baseline to begin the year. An anchor set so low that even tomorrow’s bowel movement will be a step up in excitement.
