. . .here are my thoughts.

What’s the best way to eat pancakes?

Put them in your mouth. Chew. Enjoy. Repeat. It’s really that simple. I mean, how can you go wrong with pancakes? I suppose coconut anywhere near them would spoil their perfection. But absent that atrocity, you really can’t go wrong. There’s your classic butter and maple syrup option. I stay away from the butter, but have been known to delight in the simple flapjack and syrup combo. Sorry, flapjacks—plural. Can’t eat just one. Unless, your flapjack is served at Hash House A Go Go. These things are ridiculous! Perfectly prepared hotcakes pull double duty as main course and vehicle for fruits and sweets. They flirt with the line of infidelity. Make you feel as though you’re having a ménage a trios with your beau, Jack, and all those bananas, blueberries, strawberries, blackberries, chocolate chips, etc. As toppings or added to the batter—doesn’t matter. My personal favorite, though—being Ohio born and bred—is the Buckeye pancake: peanut butter and chocolate chips. Hold the butter, hold the syrup, hold onto your hat, because the only thing better than a mouthful of Buckeye pancake is the knowledge there’s another forkful on its way.

  1. I remember my first trip to the Cape. Stayed at a B&B in Martha’s Vineyard. First morning they served the best walnut or blueberry pancakes I ever had. I called my mother and told her I was staying there for ever. Blueberry or walnut is my fav but I sure love peanut butter and chocolate so I will have to try them next time in Columbus.

    • Do me a favor Diane: NEVER talk to Phoebe about your travels. We can’t afford them, but she’ll want to go regardless.

  2. Love pancakes. I like mine with a tiny bit of butter and nothing else. They are so good, they need nothing to make them better

My all time favorite is making them really thin. They are then called crepes. Get ricotta cheese, eggs, parmigiana cheese, parsley spinach and mix. Put a spoonful on each crepe and roll. Top with sauce and mozzarella cheese and bake. So good.
